asparagus and lemon pasta

We have had a limited season of asparagus here and whenever I see it at the markets I try to buy some! So to use my asparagus I decided to make this asparagus and lemon pasta and apparently asparagus and pasta is not really ‘a thing’ in south Italy so neither my man or his mamma in law had had it before!

Anyways this asparagus and lemon pasta is beautifully light meal that we enjoyed for a midweek lunch. The asparagus and lemon combined deliciously with the white wine and parmesan, and the pine nuts gave the pasta a lovely crunch!

Serves 4

250g asparagus, chopped into 2 inch lengths
1/2 lemon, juice and grated rind
250g penne
3 tsp parmesan
15g or 2 tbsp pine nuts
splash white wine
2 spring onions

frying pan
wooden spoon

The white wine that I used was on the sweeter side. 

Steam the asparagus for 5 minutes or until just cooked. In another pot, fill with water and add 3 large pinches of salt and bring to the boil. Add the penne and cook until ‘al dente’. 

Meanwhile in a frying pan add a generous drizzle of olive oil and the spring onion and cook over low heat until soft and translucent. Add in the pine nuts and continue to cook for 2 minutes. Add in the asparagus, juice and rind of the lemon, a pinch of salt and pepper and a splash of white wine, the parmesan and 3tbsp of water from the pasta. 

Drain the pasta and add to the frying pan and toss with the asparagus mixture!

Serve with some extra parmesan.
