Aubergines always catch my eye when I see them, they have the most gorgeous colour! Once I learnt how to prepare and cook with them I realised that they are a very versatile vegetable to cook with.




  • Fibre - High in fibre which helps to lower cholesterol, prevention of colon cancer and diabetes.
  • Vitamin C -  A source of vitamin C which is an important antioxidant and a cofactor for collagen formation.
  • Vitamin B6 - A good source of vitamin B6 which helps to make red blood cells.
  • Potassium -  A source of potassium which is important for maintaining fluid and electrolyte balance.
