Cauliflower Dhal

I love introducing new foods to my mamma in law, it’s always such a fun experience watching her try new flavours and seeing her reactions! This recipe was one of those times, as she had never had Indian style food before.

At the moment I am going through a bit of a cauliflower craze and I’m adding it everything! However I think that because it’s going out of season soon and it’s becoming less available at the markets each week, I am taking advantage of it while I can :).

Cauliflower Dhal

 

I really enjoy dhal  because it’s incredibly healthy and you can mix and match vegetables or just use whatever you have in your fridge. Plus I love the fact that you can make it in bulk and the flavour just keeps developing the longer you leave it!

Cauliflower Dhal

Ingredients
Serves 4

2 onions, chopped
2 garlic cloves, chopped
1cm piece ginger, grated
1 dried or fresh chilli, finely chopped
1 tsp cumin
1 tsp turmeric
1 cup lentils, soaked for 1 hour
1 cauliflower, cut into florets
1 bunch spinach, roughly chopped
olive oil
salt
pepper

Equipment
large cooking pot
knife
wooden spoon

Suggestions/Variations
*You can also add some cooked chicken to this recipe.

Method
In a large pot drizzle some olive oil and add the onion, garlic and ginger and sauté over low heat until soft. Add the spices and cook until fragrant.

Add the lentils and cauliflower and cook stirring for 2 minutes. Add 3 cups of water and cook over low heat, stirring occasionally until lentils are cooked. Season with salt and pepper. Add the spinach and cook for a further 1-2 minutes.

Serve as is or with some wholegrain naan bread.
