As it gets hotter her in the south of Italy, our meals are getting lighter and lighter. It’s amazing how much hot weather reduces your appetite!

These lettuce cups are a great meal to have on those hot summer nights because it’s lovely and light plus I find lettuce especially cooling!

This recipe is loosely based on San Choy Bau, a Chinese starter, however I changed the flavours a little as access to Chinese ingredients is pretty limited here. This version however tastes just as good in it’s own unique way!

Ingredients
Serves 4

500g mince
1 onion, finely sliced
1cm ginger, grated
1 garlic clove, finely chopped
1 chilli, finely chopped
1 lettuce
1/3 cup peanuts, roughly chopped
1 carrot, cut into matchsticks
1 capsicum, finely sliced
2 tbsp sesame seeds
olive oil

frying pan
wooden spoon

Suggestions/Variations

Method
Drizzle some oil in a frying pan and put in the onion, ginger, garlic and chilli. Cook over low heat, stirring occasionally, until soft. Add in the mince and cook, stirring occasionally until browned. Stir in the sesame seeds. 

Wash and clean the lettuce, remove the outer leaves, being careful to keep them whole. 

To serve, place 2 heaped tbsp of mince into a lettuce cup and top with a pinch of the carrots, capsicum and peanuts.
