pear sorbet

Of course being in Italy, I am in the home of gelato, which means I have access to the best in the world. In fact my favourite gelateria is in Rome (opposite the Basilica di San Giovanni), it is hands down the best gelato I have ever had! Whenever we visit Rome it is our little treat that we indulge in!

However, outside of Rome and back in Brindisi, I prefer to make my own including this delicious pear sorbet. When I first made this, I don’t think it lasted even one day! In fact my man didn’t even get to try it because my mamma in law and I ate it all….whoops! :)

This pear sorbet needless to say is the perfect relief to help you to cool down on a hot summers day. It’s refreshing, cooling and is super easy to make (and even easier to eat!).

Ingredients
Makes approx 2 cups

4 pears
1 lemon, zest and juice
200ml water
1/4 cup rapadura sugar

Equipment
saucepan
knife
stick blender/mixer
bowl
whisk

Suggestions/Variations
You can use honey instead of rapadura sugar if you prefer. 

Method
Place the water and sugar in a saucepan and bring to the boil. 

Meanwhile peel, core and chop the pears. Add to the saucepan and cook until the pears become soft. Remove from the heat and allow to cool for 5 minutes. Add in the zest and juice of the lemon. 

With a stick mixer, blend the pear mixture until smooth. Transfer the mixture to a bowl and place in a freezer. Stir with a whisk every 1/2 hour until just set. 

Before to serve, leave out of the freezer for 10-20 minutes to soften.
