Sicilian Salad

Fennel and orange is a classic Sicilian combination that I have learnt since moving to Italy and it has quickly become one of my favourites. I have personalised this salad combination a little and the result is still delicious!

The combination of the crunchy, anise flavoured fennel with sweet oranges and salty olives is amazing! It is such a simple dish but the flavour combination is heavenly.

Sicilian Salad

This salad is a wonderful winter and spring dish and I will be having it as often as fennel is in season! It also is a wonderful side dish for my citrus tuna steaks

1 fennel, finely sliced
1 orange, peeled and segmented
10 olives, sliced
4 sun-dried tomatoes, sliced
15 almonds, roughly chopped
olive oil

Instead of olives, you could use capers.

Combine all the ingredients together in a bowl, drizzle with some olive oil and season with salt and pepper.

Serve as a side with fish (perfect with my citrus tuna steaks) or enjoy by itself!
