Strawberry Mousse

Here in Italy and Australia it’s Mother’s Day, so to celebrate we are having a beautiful lunch with my mamma in law (which to be honest is what we usually do for Sunday lunch anyways!). 

Strawberry Mousse

However this time for dessert we will be having this ‘light as air’ strawberry mousse! This mousse is amazing and even better, it is also good for you! I combined creamy coconut milk with fresh strawberries (using only the strawberries for sweetness) to create this healthy version of strawberry mousse. 

It really is the perfect summer dessert recipe as it’s light and refreshing plus it hits the sweet spot!

Strawberry Mousse

Serves 4

2 punnets or 500g of strawberries, washed and chopped
400g tin coconut milk
2 egg whites
squeeze lemon juice
pinch salt

stick blender
hand mixer or whisk
2 mixing bowls

If you find your strawberries aren’t the sweetest add a little honey to the strawberry mixture before blending. 

Place the strawberries, coconut milk, lemon juice in a bowl and blend with a stick blender until smooth. 

In a separate bowl, whisk the egg whites and salt with a hand mixer until you have firm peaks. 

Fold the egg whites a little bit at a time into the strawberry mixture. Transfer the mousse into individual serving glasses or dishes and refrigerate for at least 4 hours.
