Warming Breakfast Oats

Breakfast is and has always been my favourite meal of the day; and it is a well known fact that it is the most important, so in the mornings I will always go for that little bit of extra effort!

When I was growing up, porridge was something that I had for breakfast on winter mornings as it’s so warming and would give me that lovely, cosy feeling! And these (grown up version) of warming breakfast oats will also give you that feeling, along with being quick to make and full of goodness! They will definitely give you a good boost of energy right through until lunch!

So what’s so good about them? Well, oats are high in fibre, thus they will they will slow down your digestion, keeping you fuller for longer. Cinnamon is a beautiful, warming spice and is perfect to have during the cooler months, additionally one of its benefits is to help regulate blood sugar levels. Then combined with the banana and berries, both of which are full of vitamins, minerals and antioxidants, this breakfast is the perfect way to start your day!

Ingredients
Serves 2

1 cup Milk of your choice (rice, almond, dairy, soy)
½ cup rolled oats
¼ cup chia seeds
1tbsp cinnamon
1 banana, chopped
Berries of your choice, to serve*
Handful pumpkin and sunflower seeds, toasted (optional)
1tsp honey (optional)

Equipment
Saucepan
baking tray (for the seeds)
wooden spoon
Knife

Method
If you are using the seeds, toast for 5 minutes under a hot grill (180°c). Remove from the oven once toasted.

Meanwhile in a saucepan cook the oats, chia seeds, cinnamon and milk over a medium heat for 5-10 minutes or until the mixture becomes thicker.

Take off the heat and stir in chopped banana.

Serve warm in a bowl topped with the toasted seeds berries and some honey.

Suggestions/Variations
*I used goji berries as fresh berries are not in season yet, usually I would have blueberries.
